Steak Pizzaiola

Yields: 6 servings

Ingredients:
6    6-ounce strip sirloin pieces
3 Tbsp.  extra virgin olive oil
1/4 tsp.  salt
1/8 tsp.  pepper
3   cloves garlic, crushed
2   onions, diced
2   green peppers, cored, seeded and sliced lengthwise in ½-     inch strips
2   tsp.  fresh oregano
5   whole tomatoes (Heirloom when in season), crushed
1/8 tsp.  red hot pepper flakes
3    medium potatoes, blanched, peeled and sliced

Method:
Heat oil in a saute pan over medium heat; season the steaks on both sides with salt and pepper. In the heated oil over medium high heat, sear the steaks on one side until brown then flip over and brown the other side.
Remove the steaks and set aside.

In the same saute pan, lightly brown the garlic; add the onions, green pepper and oregano and saute three-to-four minutes.
Then add the tomatoes and red pepper flakes and let simmer over medium heat for approximately five minutes.
Add the seared steaks and the potatoes and simmer for five-to-eight minutes until steak is firm to the touch (medium).

Remove from pan and serve on a platter.
