Each cook is responsible for setting up their station with personal tools, cutting boards and sanitizing solution before they are to start working; responsible for setting up the mise en place for their particular station; responsible for the production, quantity, quality, freshness and consistency of their mise en place and all food that comes from their particular station. He or she must insure that all food is cooked, seasoned and presented according to presentation guidelines.

Other duties include:

• Helping control food cost by using proper handling and storage methods and directly control food costs by only using the proper portion size for menu and banquet items;
• Practice and maintain proper safety and sanitation standards established for the kitchen area, as well as work and act as a professional culinarian at all times;
  
• Participate in the proper rotation and storage of all food deliveries from the storeroom;
  
• Able to utilize slow or down time to assist in the organization and cleaning of all storage areas (dry, coolers, freezers.)

Maintains kitchen work areas, equipment and utensils in clean and orderly condition; performs deep cleaning in back and front of house areas; and completes all opening (A.M. Steward) or closing (P.M. Steward) duties as assigned in the Stewarding S.O.P manual. Other duties as assigned.

Prefer high school education; or up to six months related experience or training; or equivalent combination of education and experience.

While performing the duties of this job, the employee is regularly required to stand, walk, and use hands to handle or feel, and reach with hands and arms. The employee frequently is required to climb or balance, stoop, kneel, crouch or crawl. The employee is occasionally required to taste or smell. The employee must frequently lift and/or move up to 100 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception, and ability to adjust focus.
